After some Toying Around, I've figured out Pokemon Amie. Here's a Breakdown
There are Three Stats. Affection, Fullness, And Enjoyment
Affection is the most Important stat when it comes to gaining the benefits of Amie. To do this, you need your to make your Pokemon produce hearts until they cry three times. That will mean you've raised it's level. Do this five times and it's maxed out. To make your Pokemon produce hearts, there are two ways of going at it effectively. Petting your Pokemon and Feeding them. You can do a face making game but it's way to slow to be useful. Be careful when petting your Pokemon. Look for a petting spot that makes them happy, not angry (Example, Meowstic HATES having it's ears touched). Feeding them is nice too, but if you overfeed them, you'll get no benefit because you'll max their fullness.
Fullness is how hungry your Pokemon is/how much it can eat. When fullness is Low, it can eat more, and you can gain hearts from feeding them. Better Poke Puffs will fill this faster, but also yield more Hearts, so it's better to use better ones. Of course, there is a limited amount of Poke Puffs unless you gain more. And there's only one way to do so.
Enjoyment is gained by Playing mini games. You can play any rank you want, but the higher ranks raise their enjoyment faster. That having been said, these mini games earn you Poke Puffs, and they go up in rank with the rank of the Mini Game as well. My recommendation, find a game you're REALLY good at, and Play it on Hard a lot. Playing Mini Games also drains fullness. The Enjoyment stat slowly falls over time.
Now, how to Max your Stats to evolve that Eevee?
Pet it as much as you can. Then feed it the best Poke Puffs you have until it's full, then Play Mini Games. Then pet and feed them again, then wait. *Pet them, play with them, pet and feed them, then wait. Loop from this Point (*) until your stats are all maxed, then Level that Eevee up. Congrats on your Sylvion.
Oh yeah, and check on your stats by looking at the Switch option in Pokemon Amie's main menu.
